If that doesn't make you smile, then check your pulse my friend. I was inspired by my wonderful sister and her obsession with this drink at starbucks every Christmas season. So I gave it a go... the end result was moist, minty, choco-latteeeeee goodness. Oh and next time I want to add mint to any of my cupcakes I will buy in the off season, because trying to find mint extract around the holidays is nearly impossible. Lesson learned.
I will tweek these next time and add more expresso powder and use real starbucks coffee, I think these two elements would send this recipe over the top. Thought out loud - I should serve these as a seasonal cupcake in my shop ... duh?!
